Sauteed Baby Greens with Red Onions

Fast and healthy side dish -- Baby Kale cooked with red onions is simple dish packed with lots of nutrients. This easy side dish can be eaten with quinoa, brown rice, beans, peas or enjoyed Vegan, Gluten-free, SCD Legal!

Here’s a simple, fast and healthy side dish that can be prepared in less than 10 minutes. Baby greens usually appear in produce section in the salad section near the the mixed greens and spinach. These greens are tender and do not have a bitter flavor like the mature kale. I use them to make raw salads, smoothies and to cook with. Kale is an excellent source of vitamins C, K and A. It's a great way to incorporate more veggies into our diets. Put it on your menu plan this week!

Together with the red onions, it’s tasty and light and low in carbs and calories. Put it on your menu plan this week!

Recipe ingredients

  • 11 ounces uncooked baby kale greens

  • 1/4 red onion chopped in thin slices or shallots

  • 1/3 cup of water

  • 1 tablespoon of avocado oil or any healthy plant based oil

  • generous pinch salt and pepper

  • 1 clove garlic- rough minced

  • 1 teaspoon of garlic powder

  • 1 teaspoon of dried onion flakes

  • 1/8 teaspoon of red wine vinegar

  • 1/8 teaspoon of lemon juice

  • 1/8 teaspoon or red chili flakes (optional)



Instructions

  1. Preheat a pan on medium heat.

  2. Add avocado oil

  3. Slice onions finely and add too pan, cook for 1-2 minutes

  4. Add minced garlic, cook for 1 minute

  5. Add water to pan

  6. Wash kale and add to pan on medium to low heat

  7. Add remaining ingredients and cook for 2-4 minutes or until kale is slightly wilted

Tips: Feel free to add other vegetables like red peppers and shredded carrots. If adding carrots saute with onions then add the remaining ingredients.
